It is then fermented in open tank fermenters at 26 – 24ºC with native yeast. This process with manual pressing creates intense deep flavors and a soft mouth feel. This Pinot Noir has a pretty light ruby color. The aroma is very pleasant with rich notes of fresh cherry, raspberry and notes of cinnamon and mocha with earthy undertones.
